Sweet Potato and Spinach Frittata

INGREDIENTS
6 eggs, whisked
42g reduced fat cheese, grated
30ml of skimmed milk
non stick cooking spray
1 sweet potato, chopped
few handfuls of spinach
Salt and Pepper to season
DIRECTIONS
Preheat oven to 350°F (180°C).
In a bowl, whisk together eggs and milk.
Spray a non-stick pan, with non stick spray and add sweet potatoes. Cover and cook until sweet potatoes are almost tender, stir occasionally to prevent from sticking. Reduce the heat, add the spinach and cook uncovered, for a further 3 mins.
Place spinach and sweet potato into a baking dish. Pour egg mixture over top and then sprinkle with the grated cheese.
Bake until the eggs are set and the cheese is golden.
Serves: 4
